- Observation (CORRECTED DURING INSPECTION): Noted 2 boards of puff pastry with meat in it stored at room temperature behind sneeze guard. Staff said these items are for display and they have the prepackaged ones for customers to take themselves. Staff member added signage 'display only' at time of inspection. Inquired if someone wants the item reheated for immediate consumption how it is provided and staff said that the customers take one of the packaged ones from the retail cooler and the staff heat it up for them.
- Corrective Action(s): All cold potentially hazardous foods must be stored at 4C or less. Potentially hazardous foods are not to be stored at room temperature. In order to display foods as room temperature signage must be available to clearly indicate the items are for display purposes only. This issue was noted on the previous reports.

- Observation (CORRECTED DURING INSPECTION): Two containers of meat sauce dated March 17 were cooling in the open display cooler. Staff member confirmed that they were cooling overnight. Internal temperature of meat sauces were 10.9C and 8.7C.
- Corrective Action(s): Open display case cooler is not intended for cooling. Staff member on duty confirmed that the sauces were not supposed to be there. Ensure foods are cooled from 60C to 20C within 2 hours (use ice wand, ice bath, small shallow containers...etc) to facilitate cooling, then transfer to a cooler unit to cool from 20C to 4C. Ensure temperature is monitored during cooling process to confirm critical limits.

- Observation (CORRECTED DURING INSPECTION): Noted cooked prosciutto roll on the side of the hot holding table with no heating lamp above. Product had just been cooked within half hour and was approx 50C. Staff member reheated roll to 74C and placed it on the hot table and under the heating lamps.

- Observation (CORRECTED DURING INSPECTION): Staff member wash manually warewashing food equipment. Some solution was in 3rd compartment sink (approx 2 inches deep) which was tested and found at 0ppm quat. The staff member then started running the sanitizer from source dispenser which was at 200ppm quat, but did not drain the sanitizing compartment of the sink first. Instructed staff member to drain the water which was at 0ppm first then fill the sink with 200ppm quat sanitizer from the source.
- Corrective Action(s): Ensure staff is properly training in manual warewashing procedures and checking/changing sanitizer solution.

- Observation (CORRECTED DURING INSPECTION): A) Sanitizer in spray bottles available in the back. No sanitizer available in the front area at time of inspection. Also noted several wiping cloths on the counters.
- B) Did not detect any sanitizer in 3rd compartment of ware washing sink at time of inspection. No concerns with concentration of sanitizer at the source. Instructed dishwasher to drain the 3rd compartment and refill it with sanitizer solution of adequate concentration. Test strips were available.
- Corrective Action(s): A) Ensure sanitizer solution is readily available in each food preparation/handling area. If reusable cloth towels are used to wipe the food contact surfaces, they should be stored in a container of sanitizer solution to prevent to growth of bacteria. Otherwise, single use paper towels should be use to wipe if sanitizer will be applied via spray bottle.
