      • Observation (CORRECTED DURING INSPECTION): (REPEAT) Sanitizer not detected after final rinse cycle in mechanical low temperature dishwasher. Chlorine bottle connected to the sanitizer line is full.
      • Corrective Action(s): Operator prepared 200 ppm QUATs solution in 2-compartment sink for manual sanitizing as a temporary measure. Wash and rinse using mechanical dishwasher then sanitize manually. Fully submerge dishware for at least 30 seconds then air dry. Please obtain chemical test strips and monitor & log sanitizer levels daily for dishwasher.
