    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Grout between tiles throughout kitchen is receding and build-up of old food debris and stagnant water observed in multiple areas throughout kitchen. Daily surface cleaning of floors evident but a deep clean of areas between tiles and a thorough degrease of floors is needed.
      • Corrective Action(s): Have staff do a deep clean of all floors in the kitchen (including but not limited to grill area, blizzard prep area, dishwashing areas, storage room, walk in cooler, etc) paying particular attention to cleaning between the tiles in the dishwashing area, hall where ice machine is, both dishwashing areas. Walk in cooler floor is also very greasy and needs thorough degreasing.

      • Observation: Grout receding between tiles throughout premise.
      • Corrective Action(s): Floors need to be easily cleanable and the grout has been receding to the point where this is no longer the case. Staff noted renovations are planned at the end of the year, this can be addressed during the renovation but may need to be done outside of the renovation if the renovation is delayed.

      • Observation (CORRECTED DURING INSPECTION): Lettuce and tomatoes in line inserts being stored in a metal insert on top of ice in a container in line cooler. Metal insert where lettuce and tomatoes are stored only has contact with the ice at the bottom leaving the sides of the containers exposed to ambient temperatures.
      • Corrective Action(s): Store uninsulated inserts directly in the line cooler top to allow for complete exposure of the outside of the container to refrigeration temperatures.

      • Observation (CORRECTED DURING INSPECTION): -observations at 11:40 am while discussing the current inspection with the supervisor on duty
      • -a male employee was observed handling raw hamburger patties while loading the conveyor
      • -after loading the oven the employee proceeded to handle ready to eat foods in the preparation cooler
      • Corrective Action(s): -discard gloves and wash hands after any situation that they may be contaminated, particularly after handing foods that may contain pathogens
      • -after washing hands put a NEW pair of gloves on

      • Observation (CORRECTED DURING INSPECTION): Operator has instructed staff to drain residual ice cream mix from a virtually empty container into a new unopened packages. This practice will cause batches of mix with different best before dates to be combined. Discontinue this practice immediately
