      • > Burger toppings are to be stored in smaller inserts - store ONLY what can be used up within 2 hours, top up from the walk in cooler as needed.

      • Observation: Grill prep cooler had ambient temperature of 9.3C at the time of inspection. Reviewed temperature logs for this cooler from the past few days shows fluctuating temperatures and large discrepancy from AM to PM.
      • Corrective Action(s): Service this cooler ASAP. This is your main cook line cooler.
      • Ensure it can maintain an ambient temperature of 4C or colder at all times. All coolers should be capable of dropping back down to 4C in a timely manner regardless of surrounding equipment.

      • 2. Faucet for front of house hand sink was loose.
      • Corrective Action(s): 1. The glass face on both thermometers in the front of house undercounter freezers were cracked and need to be replaced to prevent broken glass from contaminating food/food storage areas. Spoke to assistant manager onsite who replaced the two thermometers at time of inspection.

      • 2. Plastic trays were found in the hand sink by the coffee machine.
      • Corrective Action(s): 1. Liquid soap dispensers need to be easily accessible for proper hand washing. Move the sauce/syrup dispenser out of the way or provide another liquid soap dispenser.
      • 2. Hand sinks are for hand washing only and shall not be used for any other purpose. Remove trays from the hand sink and place them in the 3-compartment sink for cleaning.
      • Supervisor corrected both issues at the time of inspection.

      • Corrective Action(s): Numerous fruit flies observed in back storage room, especailly under shelving that faces the door of the storage room. Food storage is limited in this room (ice cream freezer). Premise is serviced by a professional pest control company at least once per month for mice and fruit flies. Fruit fly trap was present in the storage room. Check to make sure area/floor under the shelving unit is clean to help control flies.
