      • Wash the mentioned areas with hot water and soap, and then sanitize every day to remove the food, grease and water.

      • The floor under storage racks, in the walk-in-cooler, has accumulated food on it. This will attract pests or allow mold to grow.
      • Corrective Action(s):
      • Clean the floor under all storage racks in the walk-in-cooler, ensure this is done on a weekly basis. It is recommended that the lowest shelf of each rack, is raised high enough so that a mop can fit under it. This will allow cleaning of the floor easier and quicker, instead of having to move the whole rack to clean the floor.

      • Repair these areas of the walls, and any other areas you find, so that the surfaces are smooth, sealed, durable, impervious to water, and cleanable. Continue to make these small improvements to walls and floors until the renovations in 2020 occur.
