      • Tile skirting was observed to be missing at one of the wall corners beneath the food preparation table in the main kitchen area, creating a hole in the wall and allowing space for food and debris to accumulate.Ensure that the necessary repairs are completed and that the walls are maintained in good state of repair to facilitate effective cleaning and sanitizing.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The gravy in the container with the lid on was observed sitting at room temperature, measured at 45°C. Staff confirmed that they are in the process of cooling it down before transferring it to the cooler.Based on time and temperature rule assessment, staff was instructed to use shallow container with large surface area-- put the container in ice immersion, remove the lid to quicken the cooling process and stir it properly and then transfer to the cooler. Proper cooling off method discussed with the staff.

      • Ice cream filled cups (16) with no lids were stored on the below area, on top of other container, inside the freezer. The duration time of those cup's storage was not assessed since there is no label/ dates on the cups. The storage conditions were assessed-- not appropriate. The ice creams were discarded. Instructions provided not to reuse the already prepared orders.
