- Observed multiple containers of dipping liquids without lids. Containers must be kept covered when not in use to prevent contamination. Corrected during inspection by covering the containers.

- Two to three ladies’ purses were observed stored on food contact surfaces in the main kitchen.Requirement: Personal items must be stored in the designated staff room to prevent potential contamination of food contact surfaces.

- During the inspection, it was observed that the current procedure for cooking precooked chicken involves setting the timer at 360°F for 5 minutes, with an additional 30 seconds added as a precaution. Staff also reported using tongs to poke the chicken to check for doneness and not using probe thermometer. Staff mentioned that they do not have functional probe thermometer.Recommendations Provided:Please purchase probe thermometer and begin using a probe thermometer to verify internal temperatures of cooked chicken and maintain a temperature log for all cooked food items to ensure consistent food safety practices and proper documentation.

- It was noted that the hand sink in the main kitchen does not have hot water. When the hot water valve is turned on, water leaks from underneath the sink. According to the manager, the valve has been shut off to prevent leakage, and a small red bucket has been placed under the pipe to catch any drips.Action Required:Please repair the sink to restore hot water, as it is essential for proper hand hygiene. Functional hot water is necessary to facilitate and encourage staff to follow appropriate handwashing practices.

- There are no visible service verification stickers on the ventilation hoods located above the deep fryer and the pizza oven. These stickers are important to confirm that the ventilation systems are being tested and serviced on a semi-annual basis to reduce the risk of fire hazards.Recommendation:It is recommended that the ventilation hoods be serviced immediately by a certified professional company and continue to be maintained on a regular (semi-annual) basis. Please provide service records to our office for verification. Additionally, implement and maintain a sticker program to clearly indicate the date of service/testing and the company that performed the work.

- Surface sanitizer was not prepared/ readily available at the start of the inspection. Upon request, the staff prepared sanitizer solutions which were measured at 200ppm QUAT. Please ensure multiple sanitizer solutions for food contact surfaces are available at all times. Sanitizer solutions should be readily available at each workstation.

- External temperature of cheese slices on the preparation line were measured at 14 C. A staff member stated they had been out of the cooler for 30 minutes. If cheese slices are going to be unrefrigerated for extended periods of time, please mark the containers with the time they were removed from refrigeration. The maximum time they are permitted to be stored at 4-60 C is 2 hours. After 2 hours, they must be discarded.Corrected during inspection.

- - Temperature logs for cold storage units (fridges/freezers) are not being properly maintained. - Some previous days in the Dairy Queen Red Book are missing temperature readings.- Today's temperature readings were forged. The "PM" column was filled in but it was only 11:15AM during the inspection.- Advised staff to retake temperatures later in the day.- Notified supervisor to inform the other supervisor, the manager, and the Owner regarding food safety record keeping (including temperature logs) and to remind staff about the proper procedures to follow.Action Required: Ensure temperature logs are being properly maintained.
