- - Temperatures of all the coolers and freezer were in compliance with Alberta's Food Regulation except 1 prep cooler, where cheese and pickles were stored (measured at 9C) and hot holding for gravy was measured at 50C. - It was observed that the hot holding for gravy was overfilled. As a result of this, there was inadequate circulation of heat throughout the gravy.Action taken:- Staff was advised not to overfill the hot holdings because it is difficult to circulate the heat and maintain the same temperature (60C) throughout the gravy.- Staff was advised to check the temperature of prep-cooler at least 4 times a day. If the temperature is not maintained at less than or equal to 4C, then, move the food items to other cooler and get this cooler fixed.
