      • - It appears that continuous accumulation of moisture and the vibrating action against the floor (from the dishwasher unit) resulted in the loosening of the floor tiles. Ensure to re-grout the floor OR replace the floor material so that the floor is leveled, mositure-proof, and not slippery.

      • Observation (CORRECTED DURING INSPECTION):
      • - Initially the food items inside the prep cooler were measured at 8-18C from the top section. Ambient temperature from the bottom compartment was measured at 10C.
      • Corrective Action(s):
      • - After having all the door and cover closed, the temperature drop was observed. Ensure that the doors are shut when the cooler is not in use. Do not store ingredients in room temperature before transferring them to the prep cooler. Prep temperature to be checked again during follow up inspection.

      • - REPEAT VIOLATION: Back handsink obstructed with containers and not readily accessible for use. Front handsink lacking single use paper towels.

      • - This is 3rd time this same violation was observed. Violation ticket will be issued. Ensure to always have the handsink area readily accessbile and fully equipped with hot & cold running water, liquid soap and paper towels. Extra paper towel roll was equipped at the front handsink at the time of inspection. Ensure to equip a holder for paper towel here.

      • - Observed a large pot of congee at 25C.

      • - Operator stated that they took it out from the cooler this morning which was about 45 min ago. Ensure to heat up the congee immediately when they are taken out from the cooler to be reheated. They should be reheated to 74C or above and kept hot at 60C for the duration of the service hours.

      • - Rice roll toppings (raw pork, beef, shrimp etc.) observed in room temperature contained in cold water. Operator stated ice bath has melted. Temperature probed at 10C - 13C.

      • - If ice bath is going to be used to maintain temperature, they have to be in a bigger container (ice ratio has to go up). Operator in agreement to adding a prep cooler to resolve this issue.
