      • Chlorine sanitizer solution prepared in the spray bottle was measured at 200 ppm. Operator diluted the solution during inspection.- As discussed, test the sanitizer concentration and ensure that sanitizer solution is available for use at all times.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • One bucket of premade bhaji (~ 19 liters) measured at 22.0C. Operator stated that the bhaji was prepared overnight at home. Operator discarded the chickpeas during inspection.- Ensure all food items are prepared in an approved kitchen. - Ensure high-risk foods are stored outside the danger zone of 4-60 degrees Celsius.
