- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- The facility is washing its milk frothing pitchers in the handwashing sink. The staff mentioned that the milk frothing pitchers are washed on-site by mixing the espresso machine cleaning powder and water in the pitchers. The items are then rinsed with water and air-dried. During the inspection, three milk pitchers were in the process of being washed (i.e., there was a mixture of the cleaning powder and water in the pitchers). In a past phone call discussion, the owner stated that all reusable items are brought back to Dark Woods Brewing in Innisfail to be washed. Violations: 1) The reusable milk frothing pitchers are not properly cleaned. Please ensure that reusable items are washed, rinsed, and sanitized. 2) The handwashing sink cannot be used for dishwashing and must be used only for handwashing. Please ensure that one of the following actions are taken to resolve the violations: 1) Ensure there is an adequate number of reusable items to use during service hours, and dirty items are brought back to the approved facility to be washed, rinsed, and sanitized. 2) A two-compartment sink is installed for dishwashing on-site. In addition to the above, ensure that the staff understands the requirements of dishwashing and that the handwashing sink cannot be used for dishwashing.
