- The cutting board at the prep line is deeply scarred and stained. The deep scarring harbours bacteria and cannot be easily cleaned and sanitized.*** Please resurface or replace the cutting board. These cutting board will need regular review of the condition and be resurfaced or replaced as needed. ***

- 1. Spilled Ketchup was observed on the floor below the ketchup refill station.2. There was a build-up of fryer oil behind the deep fryer units.*** Please ensure that the following locations are cleaned immediately and on a regular/frequent basis. ***

- A leak was observed at the commercial dishwasher. This leak needs to be repaired to ensure proper water pressure is available for the commercial dishwasher to adequately clean and sanitize dishes and prevent a moist environment favourable to pests. Establishment is closing for the season at the end of the month. Please ensure this leak is corrected prior to opening next season.

- The bottle identified to PHI Catherine Bulek-Lachman as sanitizer was found below acceptable concentration (<100ppm) and not adequately labeled. The bottle was emptied, refilled with sanitizer at an acceptable concentration and labeled.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Fridge #1 was found at 9.6°C and contained perishable items. Records kept by the staff showed the fridge had been at elevated temperatures for days. All perishable items in this fridge were removed and discarded; including: a bag of coffee creamers, 8 Milk-to-Go chocolate, 5 Milk-to-Go Strawberry, 8 Milk-to-Go Vanilla and 3 tetra-paks of open juices.

- The hand sink was not adequately supplied with paper towel for drying hands after handwashing. Ensure hand sink is stocked with paper towel at all times.

- Significant evidence of pest activity within the facility was observed in the form of pest droppings/feces.

- Points of entry for pests were observed in the form of gaps with visible daylight at exterior doors.

- Build-up of food debris was observed in hard-to-reach areas such as below and behind the dishwasher, below and behind the deep fryer (grease build-up) and under the prep cooler in the main kitchen area. This buildup of debris serves as an attractant and source of food for pests. The fan is the walk-in cooler was visible coated with dust as well as the prep-cooler compressor venting. High touch surfaces and walls were visible dirty. Mould growth was observed in the walk-in on the edges of the doors. There are many unused items being stored throughout the facility. Some areas are very cluttered. This condition creates an environment favourable to pests as there are areas that are undisturbed for long periods and are not cleaned regularly.
