      • Observation (CORRECTED DURING INSPECTION): 1) Plugs were not in use/present at time of inspection inside the 2 compartment sink.
      • 2) Bleach surface sanitizer not prepared at time of inspection.
      • Corrective Action(s): 1) As discussed, all utensils/dishes must be properly washed/rinsed with water and soap in the first compartment, and sanitized in the second compartment with a mixture of bleach and water (1/2 tsp bleach per liter of water). Use of plugs is key to ensuring that dishes are getting washed and sanitized properly, as the sinks must be filled with either the bleach water solution or the soap water solution so that dirty items can be fully submersed.
      • Ensure plugs are always available for all sinks.
      • 2) Ensure that proper bleach surface sanitizing solution is available at all times for the meat section (1/2 tsp bleach per 1 liter of water. Operator prepared solution during inspection.
