      • Observation: The Permit To Operate was not posted in the facility. The decal for the current year was posted.
      • Corrective Action: Obtain a replacement Permit To Operate, attache the decal to it and post the Permit in a conspicuous location in the facility.
    • 211 - Frozen potentially hazardous food stored/displayed above -18 °C. [s. 14(3)]
      • Observation: The temperature in one of the Fridgidaire freezers is between -1° and -6°C.
      • Corrective Action: Reduce the temperature to -18°C or less.
    • 212 - Operator has not provided acceptable written food handling procedures [s. 23]
      • Observation: There is no written Food Safety Plan in the facility.
      • Corrective Action: Maintain a written Food Safety Plan in the facility and provide a copy to the EHO.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: The dish washing machine rinse temperature is less than 60°C. A temperature of 71°C or more is required to sanitize kitchen items.
      • Corrective Action: Until the dish washing machine has been repaired, sanitize all kitchen items using the 3-sink method, including a bleach sanitizing solution with a Chlorine concentration of at least 200 ppm.
    • 314 - Operator has not provided acceptable written sanitation procedures [s. 24]
      • Observation: There is no written Sanitation Plan in the facility.
      • Corrective Action: Maintain a written Sanitation Plan in the facility and provide a copy of the Plan to the EHO.
