      • Observation (CORRECTED DURING INSPECTION): No chlorine sanitizer residual detectable in the sanitizer solution (spray bottle) at time of inspection. Solution was replaced while on-site. 100ppm chlorine residual is now available in the spray bottle.
      • Corrective Action(s): *Ensure to make fresh sanitizer solutions daily to ensure food-contact surfaces in the butcher area are properly-sanitized.

      • Observation (CORRECTED DURING INSPECTION): Paper towel dispenser at the hand-sink in the butcher area was empty. Operator indicates that the wall-dispenser is not working properly. Operator otained a roll of paper towels from an employee and placed it beside the hand-sink while on-site.
      • Corrective Action(s): *Ensure paper towels are available within reach of the hand-sink at all times
      • *Repair or replace the paper towel dispenser as necessary to maintain supply of paper towels at the hand-washing station.

      • 2) The wall tiles, in the Meat Dept., has spaces between the tiles. Food + water can accumulate in.
      • 3) Raw, unsealed wood shelves found in the walk-in cooler. Wood can absorb food.
      • Action: Install caulking/sealant in the junctions between the floor + wall; install grout between the wall tiles; and paint all wooden shelves with a light color.
