- Observation (CORRECTED DURING INSPECTION): Kitchen dishwasher (low temp) measured 0 ppm solution. Container solution looked clear and liquid was having trouble pumping through the system. Likely the pump not working or transport tube not tight. Ecolab called by operator and service tech confirmed in next hour or less.
- Corrective Action(s): Service tech came during inspection. Change tube line. Changed chemical. checked solution at 75 ppm. All fixed.

- Observation: A) Dishwasher (low temp) measured 10 ppm in final rinse. Concentrate jug nearly empty (about 1 to 2 inches left at bottom). Concentrate colour light. Replaced with fresh concentrate. and system was primed. Achieved proper 50 to 75 ppm at plate.
- B) Quats sanitizer auto dispenser at double sink concentrate empty. Also doesn't seem to be feeding into system. Changed concentrate and washed out damper. Raised residual to above 200 ppm. Remeasured spray bottle at 200 ppm by adding half water to spray bottle.
- Corrective Action(s): Have dishwasher serviced and ensure system is working as it should. Querry about reduced strength of concentrate at end of bucket as discussed. Make sure staff pay attention to volume in concentrate container AND test daily for residual.
- Have serviced and ensure the unit is dispensing at 200 ppm recommended for foodsafe environments.

- Make sure to clean shelving in storage room, AND re-clean and sanitize all eent dishes on lowest shelf prior to use.

- Corrective Action(s): Increase bait traps currently in use. Add soap to cocktail and foam up with small volume of water to increase catches. Replace all traps with fresh cocktail daily until numbers or season dictate. If you have a vacuum use it to quickly reset the numbers.

- Sticky tape for flies above prep area in kitchen.
- *Possible cross contamination issue as discussed.
- Mouse droppings evident in some areas on production side. Most areas actively controlled by Pest Control Contractor, but grain stoage rack section has notable activity.
- Corrective Action(s): Remove sticky tape from food prep area(s).
- Make sure sypups related spills are cleanied up right away and grease trap area is maintained clean and dry so potential breeding areas minimized.
- Make sure to discuss with Pest Control technician and have grain racks targeted with trapping (either increase traps or re-locate).

- Reset should be completed within next 14 days then maintenance plan implemented with cleaning staff.
