- Observation (CORRECTED DURING INSPECTION): Operator stated that equipment and utensils are not washed and sanitized in the dishwasher and are not sanitized manually (only wash and rinse steps are used in the two-compartment sink).
- Corrective Action(s): All equipment and utensils must be washed, rinsed, and sanitized. A sanitizing step is required, whether items are sanitized manually at the two-compartment sink or in the dishwasher, in order to effectively kill or inactivate potential pathogens that may remain on surfaces after washing and rinsing. Requirements were discussed with operator. All equipment/utensils to be sanitized.

- Observation (CORRECTED DURING INSPECTION): Operator stated he uses Lysol to disinfect counter prior to commencing food preparation.
- Corrective Action(s): Immediately cease use of this product as it is not a food grade sanitizer. Quats sanitizer is available for use in the Commissary Kitchen in labeled spray bottles at a concentration of 200 ppm, which is a food grade sanitizer. Lysol may contain chemicals that are unsafe for food. Ensure all surfaces are being sanitized with a food grade sanitizer going forward.
