      • Observation: Ice machine observed having mildew growth and dead fruit flies in the water.
      • Corrective Action(s): Immediately discontinue the use of the ice machine.
      • Empty, clean and sanitize, discard the first round of ice before resuming the use of the ice machine.

      • 2. Spray bottle of QUAT sanitizer measure 50ppm.
      • Corrective Action(s): 1. Please service dishwasher and ensure final rinse temperature at plate level reads 71C or higher.
      • Currently staff will be washing and rinsing using the dishwasher and dipping the dishware in QUAT sanitizer at the two compartment sink.
      • 2. Staff refreshed sanitizer from dispenser which measured 200ppm QUAT sanitizer.
