- Logs showed QUATs sanitizer concentrations at 150 ppm, which the facility recorded as "satisfactory." QC staff claimed this was based on water temperature. However, logs failed to record the corresponding water temperature to justify this lower concentration.Corrective Action: Unless data from the chemical supplier is provided to prove efficacy at these lower concentrations, the operator must comply with requirements of: - QUATs: Minimum 200 ppm. - Chlorine: Minimum 100 ppm.Attached to this report are the sanitizer concentration requirements.

- Dishwasher logs recorded 50 ppm chlorine, which is below the required minimum of 100 ppm. An on-site manual check confirmed a residual of only 50 ppm at the plate level. QC staff stated that their chemical supplier told them that the 50ppm chlorine residual is satisfactory.Corrective Action:Unless data from the chemical supplier is provided to prove efficacy at this lower concentration, the operator must comply with requirements:- Quat: Minimum 200 ppm.- Chlorine: Minimum 100 ppm.
