    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • * Staff personal items (coats) were seen stored at the back of the kitchen under food ingredients (boxes of potatoes and onions). Please ensure all personal items are stored separately from food to prevent contamination.** Boxes of meat was stored on the floor in the walk-in cooler. Please ensure all food items are stored at least 6 inches above the ground to prevent contamination and control for pest.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • * Raw meat was observed to be stored above the fill line in the prep cooler beside the cook line. Operator was instructed to remove the excess food. Please ensure all food is stored below the fill lines in the prep coolers to allow for proper refrigeration.** A bucket of chicken soup was observed sitting in the kitchen at room temperature at 44C. Operator advised that it has just been made and was cooling for about an hour 30 minutes. She was instructed to place it into the cooler immediately. Please cool food properly under ice and in smaller containers to allow for rapid cooling.

      • The hand sink in the kitchen is faulty, leaking water. Please repair .
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Mice droppings were observed under the dry storage area. Please clean all droppings and continue to monitor for pest activity.

      • Using the 2-compartment sink method for washing and sanitizing reusable customer dishes. Dishwasher is able to be used for dishwashing and then manual sanitizing in the 2-compartment sink.
