      • Observation: Some (minor) fruit/drain flies noted around dishpit area.
      • Rodent traps (mice) inside and recently set by PCO. No activity notable inside, but activity noted in garbage area.
      • Corrective Action(s): Continue to control food sources for fruit flies, especially where water and food wastes are allowed to mingle for long periods of time. Regular and complete daily clean up to the dish pit and control of breeding environments for flies (all drains) important.
      • Review outside rodent control measures with PCO as discussed.

      • Observation: Several areas of the kitchen observed with a build-up of food debris. This include:
      • - Floor behind green shelving in main kitchen area;
      • - Floor along wall below shelves in walk-in cooler;
      • - Floor of storage closet at back door; **Also make sure no food or food container equipment is stored in same area as chemical de-icing salts, and i recommend storage of this product should be in a proper container (rubbermaid of some sort) to further isolate this chemical.

      • Cooling drawer in third compartment (as discussed) still struggling with temperature. Ham at 14 C. Discarded ham.
      • Corrective Action(s): Juggle food storage locations as discussed. Move high risk foods to lower drawers and out of unit that is struggling. Less risky foods can be kept closer to the heat. Continue to use ice to help keep foods below 4 C. **Make sure drawers are closed at all times when not in use.

      • Observation: Cold food inserts, and a set of drawers under grill along cook line warm. Measured between 7 and 11 C. Remove food from identified units if recovery not within 30 minutes.
      • Additionally, locate higher risk foods (when practical) away from heat sources and supplement with ice inserts to help key foods maintain 4 C or less through rush periods.
      • Corrective Action(s): Monitor for temperatures and service unit as necessary. Possibly working through defrost cycle.
      • See above for additional strategies to regulate food temperatures.
      • **Audit on re-inspection date noted on report.

      • Observation: Minor fruit fly problem noted. Better than in previous inspections. Pest Control on site at time of inspection placing traps in several areas, servicing UV light, and foaming drains and corners. Acta-zyme foaming agent. Dishpit has some activity, but also there are areas in dish pit where cleaning and standing water removal could be improved.
      • Corrective Action(s): Continue to use PCO to advise and help control fly populations. Make sure staff clean under counters, especially in dish pit, including seems along statinless steel runners under these counters. No food should remain for more than a day.
      • Check for cleaning in and under equipment at follow up inspection date noted on report.

      • Observation: Accumulation of food debris observed in the following areas:
      • - Cook line countertops and surrounding surfaces. These are primary work areas and should be completely cleaned from edge to edge surface to surface at the end of the day. There are areas that are not getting proper daily cleaning and are building up making daily cleaning more difficult.
      • - Floor in cook line, under counters at legs or wheels.
      • - Walk-in cooler floor.
      • - Under stainless steel counter at dish pit.
      • Corrective Action(s): Make sure staff, including nightly cleaning staff perform proper and complete clean up of above noted areas and that staff are following scheduled cleaning in sanitation plan.
      • **Any spills or accidental messes must be cleaned up immediately, and staff must not wait for scheduled cleaning to perform task.
      • **Move equipment to perform cleaning if necessary.

      • Observation: A) Drain and fruit fly infestation persists in kitchen area. Observed flies at back door, hot water tank cavity and mop sink area in low to moderate numbers.
      • Significant numbers of flies above, below and around dish pit. Water is leaking from sink onto floor and infiltrating into wall. Observed a significant amount of sludge or organic matt developing on wall tile floor interface extending throughout much of the area below the dish pit. Tiles and edge of floor/wall fallen off or not as originally designed to keep water out of wall.
      • Corrective Action(s): A) Improve cleaning in back closets, and mop sink area.
      • **Dishpit must be remediated in the following manner:
      • i) Water leaking onto the ground must stop. Repair all water leaks and points of drippage onto the floor.
      • ii) Completely clean and dry the wall structure, surrounding wall board, and floor wall interface.
      • iii) Repair and re-seal the wall floor interface to prevent water intrusion into the wall.
      • iv) Clean and seal all stainless steel joints at the dish station to limit drain and fruit fly breeding grounds.
      • **A specific written action plan is required for this correction. Submit to this office within 14 days.
      • Clean up the garbage enclosure and ensure old furnature is removed, any equipment is organized and no areas of harbourage remain.
      • B) Remove clutter from garbage area and clean ground to reduce rodent attraction and harbourage.

      • Observation: Dish sink station observed with many areas accumulating filth to the point where there is an abundance of organic matter (sludge growth) developing. The design and construction in this area has deteriorated to a point where proper cleaning and maintenance is not possible.
      • Corrective Action(s): As noted in violation 304 the dishwash station requires remediation to promote adequate cleaning and sanitation. Seal up all potential breeding habitat as discussed. Remove and replace stainless steel backing to access wall cleaning. Seal as many joints and areas where water can seep and organic matter develop as a tool to eliminate drain and fruit flies.

      • Observation: Drain flies observed in several areas of premises including in and around Hot Water Tank enclosure, Banquet closet and dish pit.
      • Corrective Action(s): Discuss with Pest Control and treat all drains accordingly. Have Pest control company identify all treated locations and required frequency on report for review at follow-up inspection date noted on report. Eliminate accumulation of stagnant water and leaks from equipment onto floor of premises.

      • Observation: 1) Hot Water Tank leaks and water is accumulating in this area. No visible drain and drain pan exists for this unit.
      • 2) Dish pit area floor dirty and accumulating stagant water. Water also leaking from water line below dishwasher. Drain flies observed.
      • 3) Banquet closet still not repaired as requested from previous inspection. Paint and wood fibre flaking onto floor and banquest equipment.
      • Corrective Action(s): 1) Hot water tank must be repaired by follow up inspection noted on report.
      • ** Remove tablecloth barrier.
      • 2) Repair leak. Improve cleaning quality and frequency in this area to maintain more sanitary enviornment and better discourage pests.
      • 3) Banquet Closet must be properly repaired by follow up inspection date noted on report. Recommend the removal of the door to facilitate better and more frequent cleaning and maintenance. Remediate this room ASAP.
      • **Door slide is not well maintained.
