Tube was primed several times but due to lack of sanitizer remaining container, the machine wash still not dispensing enough chlorine during the final rinse. Technician came during the inspection and replaced the sanitizer at this time. 50ppm chlorine was achieved at the plate level after final rinse.
      • Corrective Action(s): Ensure to have the sanitizer level monitored on a regular basis. Check using the test strips available on site.

      • Observation (CORRECTED DURING INSPECTION): Cut vegetables/cheese soaked in water in the inserts of prep cooler had surface temperature ranging in between 7-8.4'C. Operator had advised the water for these have just been changed. Cheese soaked in water had internal temperature at 4.6'C. Operator had changed the water and closed the lid at this time.
      • Corrective Action(s): Ensure to keep the lid closed when not in use. When changing the water, ensure to soak them in COLD water. Continue to keep small amount of food in these inserts.

      • Corrective Action(s): Ensure to add 1/2 tsp of bleach per 1L of water to prepare the correct concentration of sanitizer. Ensure to use the solution to sanitize all food prep surfaces every 2 hours and after each possible contamination throughout the day.
