    • 301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation (CORRECTED DURING INSPECTION): There was 50-100ppm bleach in the sanitizer spray bottles. The test strips were stored upstairs and had expired. Solution in the spray bottles are tested quaterly. Staff go through the solution in the spray bottles every 2-3 days.
      • Corrective Action(s): Store the test strips by the 2-compartment sink. Pay attention to the expiry dates of the test strips. Ensure there's at least 100ppm chlorine in the sanitizer solution. Test the solution more frequent i.e. at least weekly.

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Knives are not being washed with detergent prior to sanitizing.
      • Corrective Action(s): Follow proper dishwashing procedures. Knives should be washed with detergent, rinsed, sanitized then air dried.
