      • Observation: Walk in cooler stored food requires food grade covers after lunch rush, such as metal dolly tray with no dolly cover, open container of bacon and fresh prepped food. In stand up freezer, sealed taco wraps are stored below raw duck and pork chops. Ensure to store ready to eat foods are stored above and/or away from contaminated foods on dedicated shelves.
      • Corrective Action(s): 1. Ensure food in storage long term are covered with food grade lids or food grade covers to prevent contamination. A dolly cover or food grade wrap for trays of food is required.
      • 2. Always store ready to eat foods above or away from raw proteins to prevent cross contamination.

      • Observation (CORRECTED DURING INSPECTION): Mildew formation was observed in the interior of the ice machine.
      • Corrective Action(s): Remove ice, clean and sanitize the interior of the ice machine. Ensure that the interior of the ice machine is cleaned regularly.

      • Observation (CORRECTED DURING INSPECTION): Front bar glasswasher had 0ppm Chlorine residual.
      • Corrective Action(s): Re-run all glasses washed today through dishwasher in kitchen. Wash glasses using kitchen dishwasher until serviced. Do not use bar glasswasher until 50-100ppm Chlorine resideual is detected. Operator stated that glasswasher will be serviced today.

      • Observation (CORRECTED DURING INSPECTION): 1. In-use utensils near grill were stored in room temperature water.
      • 2. Bowls were observed in dry food items.
      • Corrective Action(s): 1. In-use utensils may be stored in one of the following manners:
      • →In clean, dry containers, and washed every 2-4 hours
      • →In ice water, and replaced when ice is melted.
      • 2. Ensure that scoops in dry food items contain a handle, and are not touching food items.

      • →Behind dishwashing area in kitchen

      • 2. Minor water pooling was observed under prep cooler next to walk-in cooler and under handwash sink in bar area.
      • 3. Fruit flies were observed at bar and kitchen.
      • Corrective Action(s): 1 & 2. Clean areas listed above, and ensure that these areas are cleaned regularly, and ensure that these areas are cleaned regularly. To be corrected by 26-June-2025
      • 3. If more fruit flies are observed further enforcement action will be required. Maintain sanitation, and remove pooling water. To be corrected by 26-June-2025
