    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Not all coolers and freezers have a thermometer inside. Ensure all coolers and freezers have a thermometer inside, close to the door, for monitoring temperatures.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Liquid hand soap in a dispenser is not available. Ensure there is proper supplies prior to any food handling.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Pest monitoring is not occuring. Even when pests are not evident a pest monitoring program is required. Place monitoring devices and record monitoring efforts monthly.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The ventilation unit is overdue for service. Have the unit professionally serviced.
