      • Observation: (CORRECTED DURING INSPECTION) Wiping cloths left on the counters between use. (Public Health significance) - Cloths once used can harbor and grow bacteria if left as used at room temperature.
      • Corrective Action: Operator immediately stored wiping cloths in sanitizing solution. Store wiping cloths in a sanitizing solution of 200 ppm chlorine or 200 ppm QUATs. Mix according to the manufacturer's specifications.
    • 311 - Repeat Premises not maintained as per approved plans [s. 6(1)(b)]
      • Observation: Men's washroom, rubber baseboards collapsed. Public health significance: Tight durable surfaces are required throughout food premises to facilitate proper cleaning and minimize pest attractants.
      • Corrective Action: Operator aware to replace collapsed baseboards.

      • Observation: In the men's washroom, rubber baseboards have collapsed. Tight durable surfaces are required throughout a food premises to facilitate proper cleaning and minimize pest attractants.
      • Corrective Action: Re-install the baseboards.
    • 311 - Repeat Premises not maintained as per approved plans [s. 6(1)(b)]
      • Observation: In the dish washing area, floor and wall surfaces are damaged. Tight durable surfaces are required throughout a food premises to facilitate proper cleaning and minimize pest attractants and to minimize food contamination concerns.
      • Corrective Action: Repair or replace damaged surfaces so that they are tight, durable and easy to clean. Install baseboards as needed and seal gaps between walls and floors.

      • Observation: (CORRECTED DURING INSPECTION) In the walk-in cooler, meat is stored above produce.
      • Corrective Action: Store meats and produce in separate areas to avoid cross-contamination.

      • Observation: The interior surface of the Fridgidaire upright freezer is dirty with accumulated food particles on it.
      • Corrective Action: Clean the interior surfaces thoroughly.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: The floor beneath ovens and other cooking equipment has a significant accumulation of grease/ oil/ dirt.
      • Corrective Action: Thoroughly clean the affected surfaces.
    • 311 - Premises not maintained as per approved plans [s. 6(1)(b)]
      • Observation: Above the main prep. table, significant amounts of dust have accumulated on the ventilation system vents. The dust can fall onto and contaminate surfaces and food on the prep. table.
      • Corrective Action: Remove the accumulated dust from the vent surfaces.

      • Observation: Paper towels in dispensers are not provided for hand washing in the staff washroom. (Public Health Significance) Hand washing is an important practice to ensure food are protected from cross contamination from other previously handled foods or contact surfaces.
      • Corrective Action: Paper towels in dispensers must be provided to facilitate proper hand washing.

      • Observation: Ice machine not properly clean. (Public Health Significance) This could lead to cross-contamination from the ice machine to the ice which can caused food borne illness.
      • Corrective Action: Student EHO instructed the staff to clean ice machine frequently, inside and outside.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Wiping cloths left on the counters between use. (Public Health significance) - Cloths once used can harbor and grow bacteria if left as used at room temperature.

    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Surfaces are not sufficiently sealed or durable to facilitate regular cleaning and sanitizing. Flooring around the dishwasher is damaged and raw wood is exposed. (Public Health significance) Materials like raw wood will absorb water and harbour and allow disease causing bacteria to grow. Proper materials and finishing is required to ensure adequate cleaning and sanitizing.
      • Corrective Action: Repair or replace floor around dishwasher to provide a durable easy to clean surface.
