- Observation (CORRECTED DURING INSPECTION):
- 1. Surface sanitizer in the spray bottles (x3) measured at 100 ppm QUATS
- 2. Food debris observed underneath the meat slicer blade guard.
- Corrective Action(s):
- 1. Spray bottles have been replenished and measured at 200 ppm QUATS.
- - Have the sanitizer solution run for few seconds before filling up the sanitizer spray bottle to obtain the correct concentration of the QUATS solution.
- - Recommend purchasing QUATS test strips to monitor the concentration of the QUATS (200 ppm).
- 2. Staff removed the blade guard to clean the blades.

- Observation:
- - Observed sous vide machine being used at the facility. The use of sous vide machine procedure could not found in the facility's approved food safety plan at the time of inspection.
- Corrective Action(s):
- - Operator stated they fully cook the vacuum sealed meat in the steamer and place the meat into the sous vide machine to hold the meat at 60C or above.
- - Update the food safety plan and email it to the EHO's email address by tomorrow.

- Corrective Action(s): Operator plans to install LED lighting here. Ensure that this is completed prior to opening the restaurant

- Observation: Peanut butter, cashew butter and almond butter is prepared here and jarred. A Food Safety Plan must be submitted to Fraser Health and approved prior to the sale of new products.
- Corrective Action(s): Remove the products from sale until a Food Safety Plan is reviewed and approved.

- Observation: Alterations were made without prior health approval:
- -The pizza oven was removed from the front and a gelato service area was added with a new freezer, dipper well and a new hand washing sink.
- -A new cooler was added to the front
- -The hand washing sink at the front cook line is disconnected. Cook line is not currently in use. This must be re-connected and supplied with hot and cold water, soap and paper towels prior to using the cook line.
- -The glasswasher changed locations in the bar.
- -Equipment in the back (coolers, freezers etc.) have been moved
- Corrective Action(s): New floor plans are needed within one month that show a bird’s eye view of the premises, all of the equipment, sinks, tables and is properly labelled.
