- 1) Dishwasher final rinse did not register a sanitizing residual (highest temp reached was 51C). Please repair. Conduct manual wash, rinse, sanitize in the 3 comp sink until dishwasher is repaired.2) Staff not always sanitizing equipment in the manual wash procedure. Please ensure to comply with the manual wash process: wash with detergent in the 1st comp, rinse with clean water in the 2nd comp, then sanitize by complete immersion in an approved sanitizer in the 3rd comp.
