- Observation: (CORRECTED DURING INSPECTION) A 3 compartment sink is used to manually wash-rinse-sanitize utensils. Washing and sanitizing chemicals are added by machine. The sanitizing solution concentration is 100 ppm QUATS. The required amount is 200 ppm.
- Corrective Action: Ensure that the sanitizing solution is 200 ppm or more.
