      • Observation: Significant amount of sand or similar material accumulating under upright Coolers.
      • Fingerprints and food handling related build up noticed on upright coolers.
      • Corrective Action(s): Discussed with operator. He will move upright coolers and thoroughly clean the floor. operator immediately cleaned and sanitized the doors to the upright coolers. Make sure to clean these surfaces as one might clean and sanitize direct work surfaces.
      • **Public will notice and appreciate added cleaning and sanitizing of all parts of food premises as concerns with coronavirus exist these days.
      • **Be more proactive with cleaning and sanitizing public areas too. Seats, washrooms, door handles bar tables etc. Having and using containers clearly marked as sanitizers will help.
      • **Make sure to be extra vigilant in handwashing procedures, especially after contact with money or customer waste.

      • Observation: Observed accumulation (minor to moderate) of food debris inside prep cooler #1 (sauces) and below grill (floor around legs and at back along wall).
      • Corrective Action(s): Make sure as part of the daily clean-up all parts of the food prep areas (including inside prep cooler) gets a cleaning and spot sanitizing.
      • Make sure the area below the grill is cleaned more often than current cleaning schedule. If area is cleaned thoroughly every two weeks, increase to weekly. This will help reduce the accumulation of greases and food debris in around this area.
