      • It is recommended that the facility operator obtain a waterproof, maximum registering digital probe thermometer and chlorine test strips to monitor dishwasher rinse cycle and food contact surface sanitizer concentration.It is recommended that food safety records be maintained. Food storage temperatures should be monitored and recorded at least daily anytime food is stored in the facility refrigeration/freezer units. For events it is recommended that additional monitoring and recording take place to include cooking temperature, dishwasher sanitizing cycle, food contact surface sanitizer concentration, storage temperatures, etc. Templates are provided.
