      • Continues: Repairs for the commercial dishwasher have not been completed as of the time of the inspection. Operator confirmed soon after the inspection that Northstar Repair was contacted for an update, and confirmed that it had been overlooked somehow, and was placed on the top priority list.The two-compartment sink method continues being used and the operator confirmed that single-use disposable customer utensils were being provided for the time being.Recommend obtaining thermo-labels or a maximum registering thermometer to verify the unit reaches at least 71C at the dish level.

      • Commercial dishwasher is not functional at the time of the inspection. Operator indicated that it will be repaired within the next month. Until then, the large two-compartment sink compartments are being used for dishwashing. Please ensure the proper two-sink method is followed and please switch to single-use disposable utensils for customers until the commercial unit is repaired.

      • Ceiling beside HVAC system has lots of grease built up on ceiling tiles. They need to be replaced. The ventilation does not pick up all grease vapors.

There is grease in all areas of the grill and is a significant fire hazard. *You need to do a really good cleaning of this area. This is a very hazardous situation if there is a fire this area will be extremely combustible. 2- The inside of the microwave not maintained in a clean and sanitary condition at the time of inspection.*Clean
