    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Chlorine glass washer in the bar measured 0ppm. In accordance with Section 4.2.6 of the NS Food Retail and Food Services Code, you must demonstrate that a written sanitation program is in place, which: Mechanical dishwashing machines employing chemical agents to sanitize tableware, utensils, and equipment should apply the sanitizing solution at 100ppm chlorine. Manually wash/rinse/ and sanitize glassware in sinks until unit is repaired and able to reach 100ppm to properly sanitize.
