    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Sausage in Prep cooler measured internal temperatures of 7-11 degrees Celsius. Items were moved to another cooler. Ensure that food temperatures are less than 4 degrees Celsius at all times. Ice bath was not providing sufficient temperatures to products. Ensure that containers are fully submerged in ice and water solution to keep items bellow4 degrees Celsius.

      • Small pan insert was observed to be used as a scoop and stored in the bulk product. This was corrected immediately during inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Two compartments sink faucet next to the hand sink was observed to be leaking. Please ensure plumbing is maintained in good repair.

      • Staff was observed not washing hands between glove use.Ensure handwashing is completed between glove use and different tasks.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Dairy cooler in the main dining room was at 7-8CNo thermometer was present in the cooler. Inspection was conducted during lunch period and cooler was opened frequently.Operator was told to monitor cooler temperature, 30mins-to 1 hour after lunch period. If temperature does not drop to 4C or less, dairy should be discarded. Ensure thermometer is present in cooler, records maintained of cooler at 4C or less.
