- Weatherstripping on the exterior kitchen door was in disrepair such that light was infiltrating, which can facilitate the entry of pests. Corrective action: Weatherstripping on this door must be repaired or replaced.

- Chlorine sanitizer solution registered above 200 ppm. Sanitizers that are too concentrated may leave residues on surfaces and equipment, which could lead to cross-contamination of food items. Corrective actions: The concentration of chlorine sanitizer solutions for the kitchen must be reduced to 100 ppm. In order to achieve this, a 1/2 teaspoon to 1 teaspoon of unscented household bleach (2 to 5 mL) is required per 1L of water.

- Apples were observed to be stored in crates lined with paper towels, which were damp and soiled. The staff member in the kitchen indicated that the paper towels are changed on a weekly basis. This practice can lead to the contamination of ready-to-eat foods with fungi and bacteria.Corrective action: Foods must be stored in food-grade containers and protected from contamination during storage.
