- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- The facility is using vinegar as its sanitizer solution, however this is unsatisfactory since it cannot reduce the pathogens commonly found in kitchens to a safe level. Furthermore, it does not have a DIN issued by Health Canada. Corrective action: Going forward, an approved sanitizer must be used for sanitizing equipment, utensils and surfaces. The facility has been instructed to use the bleach that they already had available onsite to create a 100 ppm chlorine sanitizer concentration (mix 1/2 to 1 teaspoon of bleach per 1L of water).
