- Area underneath the 2 compartment sink has damaged wood that is accumulating mold/debris. These area allows for the growth of potential pathogens.
- Corrective Action(s): Replace or repaint the wood to ensure a smooth finish is achieved for easy cleaning and sanitizing of the area.

- Observation: Parts of the counter and cupboards in around the sinks in the kitchen deteriorating. These areas either have become or are becoming difficult to clean and keep clean. Mould observed around backsplash. Gaps exist where water can intrude at the wall counter interface. Stagnant slimy water observed squeezing out of sink basin rim and gap at backslash. This is providing environment of microbes to grow.
- Also observed construction sawdust/material on shelves in cupboard below sinks. All of the above can contaminate food or get into food containers which could then contaminate food.
- Corrective Action(s): Clean up this area.
- Dry and properly seal with silicone any and all gaps or spaces where water can accumulate.
- Develop a plan to repair/replace structure (cabinet, counter and shelves where it is no longer smooth impervious and easy to clean).

- Observation: Oven racks from previous oven stored in storage room next to upright freezer. This area is noticably dirty and difficult to keep clean. Food accumulating in this area could promote pest activity. Discussed with operator.
- Corrective Action(s): If these racks are no longer in use they should be removed to allow easier clean up. Space is a premium in this kitchen and any unued equipment or items should be removed to allow for other uses.
- Please clean up this area to be more in line with rest of kitchen.
