      • Chlorine sanitizer spray bottle in the kitchen was tested at >200ppm. The solution was diluted down to 100ppm during the inspection.Also recommend adding an approved sanitizer (eg. 100ppm chlorine or 200ppm quat solution) for front bar area.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • The following were corrected during the inspection:1) A mug used as a scoop was repositioned, so its handle no longer touched the bulk macaroni.2) Raw meat that was stored above cheese in a cooler was moved, to prevent cross-contamination. Please ensure all utensils are stored in a manner so handles do not make contact with food. Please also ensure raw meats are stored below any ready-to-eat foods and raw vegetables.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The commercial chemical dishwasher was tested at 25ppm chlorine, likely due to a clogged ejector tube.Discussed submerging dishes in a 100ppm chlorine solution in one of the sink compartments after running through the dishwasher.Please ensure the dishwasher ejector is repaired and able to dispense sanitizer at 100ppm chlorine.
