    • 23(1)(b) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (b) allow adequate cleaning, sanitizing and maintenance.
      • In accordance with Section 2.9 of the NS Food Retail and Food Services Code, you must:supply adequate shelving in order that all materials may be stored off the floor;ensure shelving in food storage areas is constructed of materials which are durable and easily cleanable. Shelving within the walk in fridge to be replaced or refinished to provide a smooth and easily cleanable surface. Metal posts on ends of stainless counter top to be replaced or resurfaced to prevent contamination from flaking paint, and to create a smooth and easily cleanable surface.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Seals surrounding the doors of the walk-in fridges to be repaired in order to provide smooth, easily cleanable surfaces, and to prevent the accumulation of mold.
