    • 19(1)(c) A food establishment must be located, designed, constructed and maintained to ensure all of the following:  (c) that the surfaces and materials are durable, non-toxic and are easy to maintain, clean and sanitize;
      • A new grease trap was installed. Plywood is still being used as cover. Install a cover that is made of material that is smooth and easily cleanable.

    • 19(1)(c) A food establishment must be located, designed, constructed and maintained to ensure all of the following:  (c) that the surfaces and materials are durable, non-toxic and are easy to maintain, clean and sanitize;
      • Observed a piece of plywood in the middle of the floor in the dishwashing pit. PHO was advised the grease trap was rotted and it is going to be replaced so the plywood was placed over it to act as a cover for the time being. Replace the plywood with a material that is flush with the floor, non-absorbent and is easy to clean. The piece of plywood is not easy to clean, it absorbs water, and not being flushed to the floor allows water to collect under the plywood which can lead to possible mould growth. Provide PHO with a work plan that includes dates for replacing the grease trap.
    • 23(1)(b) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (b) allow adequate cleaning, sanitizing and maintenance.
      • Observed dishwasher not operating. Dishwasher must be operational. Repair dishwasher or provide chemicals so dishwasher is operational by reinspection date.
