      • - There is no proper brush to clean the space in between the blades. Ensure to equip a brush for cleaning. All the meat processing equipment (slicer, grinder, bandsaw cutter) will be checked for sanitation BEFORE they are in use during the follow up inspection.

      • 2. Mount a remaining slide door. The operator stated it is hard to find a fitting door to this unit. The temperature of the freezer was @ -12oC at the time of inspection. Given 1 month.

      • Observation (CORRECTED DURING INSPECTION): Noted the following equipment did not get sanitized properly every 4 hours:
      • 1) Meat slicer
      • 2) Bend saw device
      • 3) Small meat slicer
      • 4) Meat grinder
      • Corrective Action(s): Take all removable parts off the devices and sanitize in the 2 compartment sink using 100 ppm Cl bleach.
      • This must be done at least every 4 hours.
      • The main devices to be sanitize using wiping cloth with bleach.
