- Three chocolate containers in the pastry room, not in active use, were found uncovered. Please ensure all food items are properly covered at all times. Corrected onsite. The operator covered the containers.

- The high-temperature dishwasher measured 69C at dish level after 5 cycles, as verified with two probe thermometers. Operators noted that the dishwasher was due for descaling. Please ensure the dishwasher is functioning properly and maintained as required. Ensure the dishwasher measures 82C at the final rinse manifold and 71 at dish level to achieve satisfactory sanitation.

- A light fixture was missing a cover in the small dry storage room. Please ensure all lights are covered.

- The facility was generally clean and well-maintained. However, minor dust was observed in the kitchen near the ceiling by the prep coolers and behind large equipment. Please ensure these areas are cleaned and maintained regularly.
