      • Troubling shooting was completed. The high temperature mechanical dishwasher was operated through numerous cycles but could not achieve a hot water sanitizing temperature of minimum 71 degrees Celsius at the ware level. The facility operator has contacted a service provider to complete dishwasher repairs.Continue to utilize the three-sink manual ware washing method until the mechanical dishwasher is in proper working order. Quats sanitizer is present for the third sink sanitizing chemical.

      • The high temperature mechanical dishwasher was tested numerous times with site and AHS thermometers, and the hottest recorded water temperature after a sanitizing cycle was approximately 66 degrees Celsius. The high temperature mechanical dishwasher must be repaired to ensure a hot water sanitizing temperature of minimum 71 degrees Celsius at the ware level. In the meantime, please utilize the three-sink manual ware washing method until the mechanical dishwasher is in proper working order. Quats sanitizer is present for the third sink sanitizing chemical.

    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Daily fresh foods are processed and stored within the sushi refrigeration unit until closing. Foods are moved at day end to the walk-in cooler for overnight storage. During the inspection, it was observed that the sushi refrigeration unit was not holding foods at a safe temperature. All thermometers, AHS and facility, measured the internal temperature at 50F/10C. The daily made foods had been in the unit for approximately one hour. Troubleshooting occurred which involved cleaning the condenser fins and re-starting the unit. If the unit does not reach an internal temperature of below 40F/4C, remove all items from the sushi cooler to the walk-in cooler.
