- The concentration of buckets of Quat sanitizer solution in the facility was measured to be at 0ppm. The staff present prepared fresh buckets of 200ppm Quat solution during inspection.Please ensure 200 ppm concentration is maintained at all times. Use Quat test strips available at the facility to measure/verify the concentration.

- Plastic/saran wrap used on bamboo sushi mats was only being changed at the end of the day. The wraps were changed during inspection. The staff present were educated on the need to have the wrap changed every 2 hours.Please ensure the plastic/saran wrap is changed regularly as discussed.
