    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • At time of inspection:1. Imitation crab meat (i.e. high risk food) was found to be thawing in stagnant water in a container on the compartment sink area. BE ADVISED THAT THIS IS NOT AN ACCEPTABLE PRACTICE FOR THE THAWING OF HIGH-RISK FOOD OF ANY KIND. 2. All refrigeration temperatures noted were at or below 4 Degrees Centigrade - SATISFACTORY.3. All hot-holding temperatures noted were at or above 60 Degrees Centigrade – SATISFACTORY.The owner / operator of this facility is requested to immediately conduct the following, namely:1. DO NOT thaw high risk food in stagnant water. Ensure high risk food is either thawed in a refrigerator OR it can be placed in a container and immersed with cold running water.*****THIS ISSUE WAS ADDRESSED DURING INSPECTION.

The general sanitation of this facility was quite good, however, an accumulation of food debris was noted under / behind the grill / cooking area (closest to the front service counter).The owner / operator of this facility is requested to conduct the following, namely:1. Vacuum / clean all food debris out from under / behind this grill / counter space area.
