- Tapioca balls were being stored at room temperature. PHI was informed that a 4-hour monitoring was in place.Inspector requested that tapioca balls be kept less than 4 degrees Celsius, or greater than 60 degrees Celsius. Alternatively, a 2-hour monitoring could be in place, where leftovers are discarded after two hours.A Time as a Public Health Control Application can be submitted to the offices of Environmental Public Health to have products left at room temperature for longer than 2 hours.
