      • The QUAT sanitizer dispenser was inconsistently dispensing sanitizer. At too low a flow, the concentration was near undetectable. Conversely, at maximum flow, the concentration exceeded well above 400+ ppm.REQUIREMENT: Repair the dispenser so the dispensed concentration is consistent. Ensure QUAT Sanitizer is maintained at 200 ppm.

      • At the time of inspection, dishwasher was not dispensing detergent or sanitizer. Operator was able to prime sanitizer but not detergent. Fix chemical dishwasher so that it dispenses proper amount of chemicals. In the meantime, manually wash all dishes/ utensils

      • Utensil were placed on the grill and in a stainless container.Utensils were stored in ice water at 4°C or below.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Terija sauces kept on the hot holding were measured at 57.2°C and 38.8°C.The sauces were re-heated at above 74°C on the stove grill.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • No pH test strip to measure the sushi rice.Obtain pH test strips
