    • 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: Chopped mushrooms (potentially hazardous food) are stored next to the stove area. The temperature was measured to be at 16C. Operator stated that mushroom are kept at room temperature for 8 hours and was referring to the shelf life chart posted in the kitchen.
      • Corrective Action: Operator must set a timer for the chopped mushrooms and discard them at 4 hours mark. The operator must follow the same procedure they are following for Broccoli and Cabbage.
