      • Observation (CORRECTED DURING INSPECTION): Two buckets of rice are noted in stand up cooler, and outer surface of the buckets appeared warm. Temperature of one bucket is measured to be 27.8oC. Operator indicated rice is cooled for 30 minutes, then transferred to cooler.
      • Corrective Action(s): Proper cooling procedures should be followed:
      • 1. 60oC to 20oC in 2 hours, in shallow containers, at room temperature
      • 2. 20oC to 4oC in 4 hours, in cooler
