      • The walls and ceilings shall be in good repair and easily cleaned. MUST SEAL ALL WALL OPENINGS BEHIND THE BAR AND IN THE PREP AREA. MUST FINISH THE FRP BOARD BEHIND THE FREEZER AND PREP TABLE IN THE PREP AREA.

      • All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. MUST PROVIDE A PROBE THERMOMETER TO TAKE FOOD TEMEPRATURES.
